Citric acid is a weak organic acid which is used primarily as a natural preservative and to add an acidic or sour taste to foods and beverages. Citric acid is naturally found in citrus fruit juices as well as the juices of other fruits and vegetables. It is isolated into its crystalline form using a precipitation process involving lime (calcium hydroxide). Along with its applications in the food industry, citric acid is used as a chelating agent in detergents to allow them to foam better in hard water.
